1 cup diced bell peppers (any color)

1 cup cauliflower rice (fresh or frozen)

1/2 cup sugar-free ketchup

1 tablespoon Worcestershire sauce

1 teaspoon yellow mustard

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened to room temperature

3 large eggs

1/4 cup heavy cream

Optional toppings: sliced pickles, chopped green onions, additional cheese

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This step ensures that your casserole cooks evenly.

    Cook the Meat: In a large skillet, heat over medium heat and add the ground beef or turkey. Cook until browned, ensuring to break it apart with a spatula. If there is excess fat, drain it. Add the diced onion and minced garlic to the skillet, cooking until the onion turns translucent, taking about 3-4 minutes.

      Add Vegetables: Incorporate the diced bell peppers and cauliflower rice into the skillet. Sauté for an additional 3-5 minutes, allowing the peppers to soften and meld with the meat mixture.

        Mix Sauce Ingredients: In a small mixing bowl, combine the sugar-free ketchup, Worcestershire sauce, yellow mustard, smoked paprika, salt, and black pepper. Stir until well mixed. Pour this savory sauce mixture over the meat and vegetable blend in the skillet. Stir well to ensure everything is evenly coated, then let it simmer for another 2-3 minutes.
