Ingredients

2 ripe mangoes, peeled and diced into bite-sized cubes

1 large cucumber, diced (preferably English or Persian for less water)

1 small red onion, finely chopped

1-2 fresh red chilies, thinly sliced (adjust based on your heat preference)

1/4 cup fresh cilantro, roughly chopped

1/4 cup fresh lime juice (approximately 2 limes)

1 tablespoon honey or agave syrup (for a vegan option)

1/2 teaspoon sea salt (adjust to taste)

1/4 teaspoon black pepper

1/4 cup roasted peanuts, roughly chopped (for garnish)

Instructions

Prepare the Ingredients: Start by peeling the mangoes and cutting them into bite-sized cubes. Next, dice the cucumber and be sure to remove excess water from the seeds if using a standard cucumber to prevent a watery salad. Finely chop the red onion and thinly slice the red chilies according to your desired spice level.

Make the Dressing: In a medium-sized bowl, whisk together the fresh lime juice, honey (or agave syrup), sea salt, and black pepper until the mixture is smooth and well combined. Taste the dressing and adjust the seasoning if needed, adding more salt or honey to suit your palate.

Combine the Salad: In a large mixing bowl, add the diced mangoes, cucumber, red onion, and sliced chilies. Pour the dressing over the top of the salad ingredients and gently toss everything together using a spatula or large spoon to ensure even coating without mashing the mangoes.

Garnish and Serve: Add the chopped cilantro to the salad and toss lightly once more to incorporate. Transfer the salad to a serving dish and generously sprinkle the roasted peanuts on top for added texture and crunch. Serve immediately for the freshest taste.
