2 ripe mangoes, peeled and diced into small pieces

2 ripe peaches, pitted and diced into small pieces

2 tablespoons honey or maple syrup (adjust according to your sweetness preference)

1 tablespoon fresh lemon juice

1 teaspoon ground cinnamon (optional for added warmth)

A pinch of salt

Prepare the Fruit: Start by washing the mangoes and peaches under running water. Carefully peel the mangoes and remove the pits from the peaches. Chop both fruits into small, uniform pieces for even blending.

    Blend the Mixture: In a blender or food processor, combine the diced mangoes and peaches with honey or maple syrup, lemon juice, ground cinnamon (if desired), and a pinch of salt. Blend until the mixture transforms into a smooth, velvety puree.

      Taste and Sweeten: Take a small spoonful of the fruit puree to taste. If you prefer it sweeter, feel free to add a bit more honey or maple syrup and blend again to incorporate.

        Prepare the Baking Tray: Preheat your oven to its lowest temperature setting, typically between 140°F and 170°F (60°C to 75°C). Meanwhile, line a baking tray or a rimmed baking sheet with parchment paper, making sure the paper hangs over the edges slightly for easier handling later.

          Spread the Puree: Carefully pour the fruit puree onto the prepared baking tray. Use a spatula or the back of a spoon to spread it out evenly. Aim for a thickness of about 1/8 inch to achieve the best drying results.

            Drying Process: Place the baking tray in your preheated oven. To help moisture escape, prop the oven door open a crack while the fruit leather dries. Allow it to dry for 6 to 8 hours, checking it occasionally. The fruit leather is ready when it feels dry to the touch, can be easily peeled off the parchment paper, and has a slightly tacky texture.

              Cool and Cut: After drying, carefully remove the tray from the oven and let the fruit leather cool completely on a wire rack. Once cooled, gently peel the leather away from the parchment paper and cut it into strips or squares as desired.
