1/4 cup pure maple syrup

2 tablespoons unsalted butter, melted

1 teaspoon ground cinnamon

1/2 teaspoon sea salt

1/4 teaspoon ground nutmeg

1/4 cup water

Fresh thyme leaves for garnish (optional)

Preheat the Oven: Start by preheating your oven to 425°F (220°C) to ensure it reaches the right temperature for roasting.

    Prepare the Chestnuts: Rinse the fresh chestnuts under cold running water to clean them. Using a sharp knife, carefully score each chestnut with a small X on the flat side. This step is crucial as it allows steam to escape while roasting, making them easier to peel later.

      Roast the Chestnuts: Spread the scored chestnuts out in a single layer on a baking sheet. Roast them in the preheated oven for approximately 20-25 minutes. Keep an eye on them; they are done when the shells start to open, and the nuts feel tender. Remember to shake the baking sheet halfway through to ensure even cooking.

        Make the Glaze: While the chestnuts are roasting, prepare the glaze. In a medium-sized bowl, mix together the maple syrup, melted butter, ground cinnamon, sea salt, and ground nutmeg. Stir the mixture well until everything is smoothly combined.
