4 fillets of white fish (such as snapper, cod, or sea bass)

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

Zest and juice of 1 lemon

3 cloves garlic, finely minced

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

1/4 cup capers, rinsed and drained

1/4 cup fresh flat-leaf parsley, finely chopped

Salt and black pepper, to taste

Lemon wedges, for serving

Instructions
 

Preheat the oven: Set your oven temperature to 375°F (190°C) to get it heated while you prepare the dish.
