4 large eggs

1/2 cup shredded cheddar cheese

Salt and pepper, to taste

Olive oil, for cooking

Salsa and sour cream, for dipping

Prepare the Filling: In a mixing bowl, crack the eggs and whisk them together with salt and pepper until fully combined. Gently fold in the diced bell peppers, onions, crumbled breakfast sausage (if you're using it), and chopped cilantro. Ensure the mixture is uniformly mixed for even flavor distribution.

    Cook the Egg Mixture: Preheat a non-stick skillet over medium heat and drizzle a small amount of olive oil to coat the bottom. Pour the prepared egg mixture into the skillet. Cook the eggs gently, stirring occasionally, for about 3-4 minutes until they are just set but still a little soft in the center. Once done, remove the skillet from heat and allow the filling to cool slightly.
