1 medium head of cauliflower (approximately 2 cups when riced)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (use gluten-free if desired)

2 large eggs, beaten

2 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

Cooking spray or olive oil for greasing

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.

    Rice the Cauliflower: Take the cauliflower head and carefully remove the leaves and stem. Cut it into smaller florets for easier processing. In a food processor, pulse the florets until they achieve a texture resembling coarse rice, which should only take a few seconds. If you prefer, you can also grate the cauliflower using a box grater.

      Cook the Cauliflower: Transfer the riced cauliflower into a microwave-safe bowl. Cover the mixture with a damp paper towel to trap steam. Microwave on high for about 4-5 minutes, or until the cauliflower is tender. Once cooked, let it cool for a few minutes.

        Remove Excess Moisture: After cooling, take a clean kitchen towel and place the cooked cauliflower in the center. Gather the corners of the towel and twist tightly, squeezing out as much moisture as possible. This step is vital to ensure your tots come out crispy!

          Combine the Ingredients: In a large mixing bowl, add the drained riced cauliflower along with the shredded cheddar, grated Parmesan, breadcrumbs, beaten eggs, chopped green onions, minced garlic, onion powder, garlic powder, smoked paprika, salt, and black pepper. Stir the mixture thoroughly until all ingredients are well incorporated.

            Form the Tots: With clean hands, scoop out portions of the mixture and shape them into small, bite-sized tot shapes (similar to traditional tater tots). Arrange them neatly on the parchment-lined baking sheet, ensuring some space between each tot for optimal cooking.
