¾ cup buttermilk

For the Chicken Filling:

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

¼ cup fresh cilantro, chopped (optional)

For Assembly:

Sliced jalapeños (either pickled or fresh)

Sliced avocados (optional)

Additional queso dip for drizzling atop the sliders

Instructions

Prepare the Biscuit Dough:

    - Preheat your oven to 450°F (230°C).

      - In a large mixing bowl, combine the all-purpose flour, baking powder, salt, garlic powder, and onion powder. Whisk to blend evenly.

        - Add the cold, cubed butter into the flour mixture. Use your fingers or a pastry cutter to mix until you achieve a texture similar to coarse crumbs.

          - Slowly pour in the buttermilk, mixing gently until a soft dough forms. Avoid overmixing to keep the biscuits tender.

            Shape and Bake the Biscuits:

              - Lightly flour a clean surface and turn out the dough onto it. Knead gently 2-3 times just to bring it together. Roll the dough to about ½ inch thickness for ideal biscuit height.

                - Using a round biscuit cutter, approximately 2 inches in diameter, cut out biscuit rounds. Place the rounds onto a lined baking sheet.

                  - Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown. Once done, remove them from the oven and allow to cool slightly.

                    Prepare the Chicken Filling:

                      - In a large bowl, mix together the shredded chicken, queso dip, ground cumin, smoked paprika, salt, and pepper. Stir until all ingredients are fully combined. If desired, fold in the chopped cilantro for an herby flavor boost.

                        Assemble the Sliders:

                          - Once the biscuits have cooled down slightly, slice each biscuit in half horizontally.

                            - On the bottom half of each biscuit, generously spoon a portion of the chicken queso filling. If using, top with sliced jalapeños and avocado slices for added flavor and texture.

                              - Finally, place the top half of each biscuit over the filling and drizzle with additional queso dip for a creamy finish.

                                Serve:

                                  - Arrange the assembled sliders on a serving platter. Serve warm and enjoy your Mini Chicken Queso Biscuit Sliders with extra jalapeños or a side of salsa for dipping!
