2 ripe avocados

4 large eggs

1 tablespoon olive oil

Fresh herbs for garnish (such as chopped parsley or chives)

Prepare the Avocado Mixture:

    Begin by slicing the avocados in half, carefully removing the pit. Scoop the creamy avocado flesh into a mixing bowl. Add the fresh lemon juice, a pinch of salt, black pepper to taste, and red pepper flakes if you desire some spice. Use a fork to mash everything together until you have a creamy yet slightly chunky consistency. Set the avocado mixture aside.

      Toast the Bread:

        Preheat a non-stick skillet or griddle over medium heat. While it's heating, lightly brush both sides of each slice of sourdough bread with olive oil.
