Mini Eggplant Pizza Stacks

2 medium eggplants

1 cup marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This will ensure it's hot enough to roast the eggplants perfectly.

    Prepare the Eggplants: Slice the eggplants into rounds that are approximately ½-inch thick. Arrange these slices on a baking sheet that has been lined with parchment paper for easy cleanup. Lightly brush both sides of each eggplant slice with olive oil and season them with salt, pepper, garlic powder, oregano, and basil.

      Bake the Eggplant: Place the baking sheet in your preheated oven and roast the eggplant slices for about 20 minutes. Make sure to flip the slices halfway through the cooking time to ensure they roast evenly. The eggplant should become tender and take on a slightly golden color.

        Assemble the Stacks: Once the eggplant slices are roasted and ready, take them out of the oven. On half of the eggplant slices, spread approximately one tablespoon of marinara sauce.
