Mini Grilled Veggie Bruschetta Toasts

Ingredients
  

1 French baguette, sliced into 1/2-inch thick pieces

1 medium zucchini, sliced into thin rounds

1 red bell pepper, diced into small chunks

1 yellow bell pepper, diced into small chunks

1 small red onion, thinly sliced

1 cup cherry tomatoes, halved

3 tablespoons extra virgin olive oil, divided

1 teaspoon balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (plus extra for garnish)

Salt and pepper, to taste

4 ounces fresh mozzarella cheese, diced or sliced (optional)

Instructions
 

Preheat the Grill: Preheat your outdoor grill or grill pan to medium-high heat, allowing it to reach the right temperature for even cooking.

    Prepare the Vegetable Mixture: In a large mixing bowl, add the zucchini, diced red and yellow bell peppers, and thinly sliced red onion. Drizzle 2 tablespoons of the olive oil along with the balsamic vinegar, minced garlic, dried oregano, salt, and pepper. Toss the ingredients thoroughly to ensure the veggies are coated evenly with the dressing.

      Grill the Vegetables: Transfer the vegetable mixture onto the preheated grill. Cook for approximately 8-10 minutes, stirring occasionally, until the vegetables are tender and exhibit beautiful grill marks. Once grilled, remove them from the grill and allow them to cool slightly.

        Grill the Baguette Slices: Take the remaining olive oil and brush it generously over the baguette slices. Grill the bread for about 1-2 minutes on each side or until the surfaces are golden brown and crispy.

          Assemble the Bruschetta: Once the grilled vegetables have cooled, mix in the chopped fresh basil and mozzarella cheese (if you’re using it). Place a generous spoonful of the grilled veggie mixture atop each toasted baguette slice.

            Garnish and Serve: Finish off the bruschetta by drizzling a bit more olive oil on top, and sprinkling with additional salt, pepper, and extra fresh basil for garnish. Serve the bruschetta warm or allow it to reach room temperature for a delightful appetizer.
