Ingredients

4 whole wheat pita breads

1 cup pizza sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup sliced pepperoni or your choice of protein (such as grilled chicken, cooked bacon, or tofu)

1 cup mixed bell peppers, thinly sliced (red, yellow, and green for color)

½ cup black olives, pitted and sliced

1 tsp dried oregano

1 tsp garlic powder

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Salt and pepper to taste

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). If you want a crispy crust, place a baking sheet in the oven as it heats up.

Prepare the Pita: Lay the pita breads flat on a clean, dry surface. Using a brush or the back of a spoon, lightly drizzle or spread a small amount of olive oil over each pita. This step helps achieve a crispy texture for the crust while baking.

Spread the Sauce: Take approximately 2 tablespoons of pizza sauce and evenly spread it across each pita bread. Be sure to leave a small border around the edges to prevent the sauce from overflowing during baking.

Add Cheese: Generously sprinkle shredded mozzarella cheese on top of the sauce, ensuring that the entire surface is covered for maximum gooeyness.

Layer Toppings: Distribute your selected toppings over the cheese. Start with the sliced pepperoni, followed by the mixed bell peppers, and then the black olives. Feel free to add any other favorite toppings — this is your creation!

Season: Enhance the flavors by sprinkling dried oregano, garlic powder, salt, and pepper evenly over each mini pizza. This will elevate the overall taste.

Bake: Carefully transfer the prepared mini pizzas onto the preheated baking sheet (or directly onto the oven rack for an extra crispy bottom). Bake in the oven for 10-12 minutes, or until the cheese is melted, bubbly, and golden brown.

Garnish and Serve: Once they are baked to perfection, remove the mini pizzas from the oven and let them sit for about a minute to cool slightly. If desired, sprinkle freshly torn basil leaves on top for an aromatic finish. Slice the pizzas into quarters and serve them hot!
