Mini Pita Pizzas with Zaatar Chicken

For the Zaatar Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons zaatar spice blend

2 tablespoons olive oil

1 tablespoon fresh lemon juice

Salt and pepper to taste

For the Mini Pita Pizzas:

4 whole wheat mini pitas

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

Fresh basil leaves for garnish

Optional: Crushed red pepper flakes for added heat

Marinate the Chicken: In a mixing bowl, combine the chicken breasts with the zaatar spice blend, olive oil, fresh lemon juice, salt, and pepper. Ensure that the chicken is evenly coated with the marinade. Cover the bowl with plastic wrap and allow the chicken to marinate in the refrigerator for at least 30 minutes, or up to overnight for more intense flavor.

    Cook the Chicken: Preheat your grill or a stovetop skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Cook the chicken for approximately 6-7 minutes on each side, or until the chicken is fully cooked and has an internal temperature of 165°F (75°C). Once cooked, transfer the chicken to a cutting board and allow it to rest for a few minutes before slicing it into thin, bite-sized strips.

      Prepare the Pita Bases: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and place the mini pitas on the sheet in a single layer.

        Assemble the Mini Pitas: Spread a generous spoonful of marinara sauce over each mini pita, taking care to cover the surface. Evenly distribute the shredded mozzarella cheese on top, followed by the sliced Zaatar chicken, halved cherry tomatoes, black olives, and finely chopped red onion.
