1 pound ground beef (or ground turkey for a leaner alternative)

1 packet taco seasoning (1 oz)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced cherry tomatoes

1 cup shredded lettuce

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup salsa

1 package of mini tortilla cups (store-bought or homemade)

Fresh cilantro leaves, for garnish (optional)

1 avocado, diced (optional)

Prepare the Taco Filling: In a medium skillet, heat over medium heat. Add the ground beef (or turkey) and cook until browned and fully cooked through, approximately 5-7 minutes. Once cooked, drain any excess fat. Add the taco seasoning and about 1/4 cup of water, stirring well to incorporate the seasoning. Allow the mixture to simmer for 3-4 minutes, or until it thickens. Remove from heat and set aside.

    Prepare the Veggies: In a separate mixing bowl, combine the rinsed black beans, corn, and diced cherry tomatoes. Season the mixture with a pinch of salt and pepper to taste. Gently stir until the ingredients are well mixed; this will be your refreshing veggie mix.
