Miso Glazed Eggplant

2 medium Japanese eggplants (or 1 large globe eggplant)

3 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon mirin (or rice vinegar)

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 teaspoon freshly grated ginger

1 tablespoon sesame seeds (for garnish)

2 green onions, finely chopped (for garnish)

Fresh cilantro leaves (for garnish, optional)

Instructions
 

Prepare the Eggplants: Start by slicing the eggplants in half lengthwise. Using a sharp knife, score the flesh diagonally in a crisscross pattern, taking care not to cut through the skin. This technique helps the marinade infuse the eggplants indeed and promotes even cooking.

    Make the Miso Glaze: In a medium mixing bowl, combine the white miso paste, soy sauce, sesame oil, mirin (or rice vinegar), honey (or maple syrup), minced garlic, and freshly grated ginger. Whisk these ingredients together until the mixture is smooth and well-combined, ensuring that no lumps of miso remain.

      Marinate the Eggplants: Generously brush the prepared miso glaze over the cut sides of the eggplants, ensuring the glaze gets into the scored cuts. Place the glazed eggplants, cut sides up, in a shallow dish and allow them to marinate for at least 30 minutes at room temperature. For a more intense flavor, you can marinate them in the refrigerator for up to 2 hours.

        Preheat the Oven: As the eggplants are marinating, preheat your oven to 400°F (200°C).

          Roast the Eggplants: After marinating, arrange the eggplants cut side up on a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven and roast the eggplants for approximately 25-30 minutes, or until they become tender and develop a slight caramelization on the surface.
