No-bake cheesecakes have gained immense popularity in recent years, and for good reason. Unlike traditional cheesecakes that require baking, no-bake versions rely on the cooling and setting properties of cream cheese and whipped cream to achieve that desired creamy texture. Ingredients

1 ½ cups graham cracker crumbs

⅓ cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened to room temperature

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 ½ cups mixed berries (e.g., strawberries, blueberries, raspberries)

Additional berries for garnish

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, melted unsalted butter, and granulated sugar. Stir until the ingredients are well combined and the mixture resembles wet sand.

Layer the Base: Take 4-6 mason jars (the number will depend on jar size) and distribute approximately 3 tablespoons of the graham cracker mixture into each jar. Use the back of a spoon to gently press down the mixture to form an even crust layer at the bottom.

Make the Cheesecake Filling: In a large mixing bowl, use a hand mixer to blend the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing continuously until the mixture is fully incorporated and creamy.

Whip the Cream: In a separate bowl, pour in the heavy whipping cream and whip using an electric mixer until stiff peaks begin to form. This will give the cheesecake a light and airy texture.

Combine the Mixtures: Carefully fold the whipped cream into the cream cheese mixture using a spatula. Do this gently to maintain the volume of the whipped cream, ensuring the filling is light and fluffy.

Layer the Cheesecake: Spoon the fluffy cheesecake filling into each jar on top of the graham cracker crust, filling each jar until they are about halfway full.

Add the Berries: Distribute the mixed berries evenly on top of the cheesecake filling in each jar. For a visually appealing dessert, layer sliced strawberries, whole blueberries, and raspberries.

Top with More Cheesecake: Add another spoonful of the cheesecake mixture on top of the berries, filling each jar to the brim.

Decorate: To finish, sprinkle any remaining graham cracker crumbs on top of each jar, garnish with additional fresh berries, and if desired, add a mint leaf for a touch of freshness.

Chill: Cover each jar with a lid or plastic wrap and place them in the refrigerator for at least 2 hours to allow the cheesecake to set. For the best flavor and texture, chilling overnight is recommended.
