Ingredients

1 cup almond flour

1/4 cup coconut flour

1/2 cup maple syrup or agave syrup

1/4 cup melted coconut oil

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 cup mini chocolate chips

1 cup dark or milk chocolate chips (for coating)

Optional toppings: crushed nuts, sea salt, or colorful sprinkles

Instructions

Prepare the Cookie Dough: In a large mixing bowl, combine the almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, and salt. Use a spatula or mixing spoon to stir the ingredients together until the mixture is well combined and forms a cohesive dough. If the mixture feels too crumbly, gradually add a teaspoon of water at a time, mixing until the desired dough consistency is achieved.

Incorporate Chocolate Chips: Carefully fold the mini chocolate chips into the dough, ensuring they are evenly distributed throughout the mixture.

Mold the Cups: Line a muffin tin with cupcake liners. With a tablespoon, scoop out portions of the cookie dough mixture and press it firmly into the bottom and along the sides of each liner, creating a small well in the center for the chocolate filling.

Prepare the Chocolate Coating: In a microwave-safe bowl, add the dark or milk chocolate chips. Microwave in 30-second intervals, stirring after each interval until the chocolate is completely melted and smooth.

Assemble the Cookie Dough Cups: Spoon the melted chocolate into each lined muffin cup, making sure to cover the cookie dough entirely. Gently tap the muffin tin against the countertop to eliminate any air bubbles and ensure even distribution of the chocolate.

Chill the Cups: Transfer the muffin tin to the refrigerator and allow it to chill for about 30 minutes, or until the chocolate has set and become firm to the touch.

Finish and Serve: Once the chocolate has set, carefully remove the cups from the muffin tin and peel away the cupcake liners. For an extra touch, you can sprinkle crushed nuts, a pinch of sea salt, or colorful sprinkles on top. Serve chilled and enjoy the delightful indulgence of your homemade no-bake cookie dough cups!
