1 cup fresh blueberries, rinsed and drained

1 cup lemon yogurt (choose Greek or regular based on preference)

1/2 cup cream cheese, softened to room temperature

1/4 cup powdered sugar, sifted

1 tablespoon freshly squeezed lemon juice

1 teaspoon freshly grated lemon zest

1/2 teaspoon pure vanilla extract

1 cup crushed graham crackers (for the crust)

1/4 cup unsalted butter, melted and slightly cooled

Fresh mint leaves for garnish (optional)

Prepare the crust: In a medium bowl, combine the crushed graham crackers with the melted butter. Using a fork, mix until the texture resembles damp sand. Divide this mixture evenly among four serving cups or small dessert bowls, pressing firmly into the bottom of each to ensure a compact and even crust layer.

    Make the filling: In a large mixing bowl, use a hand mixer to beat the softened cream cheese and sifted powdered sugar together until the mixture is smooth and creamy.
