Ingredients

For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/3 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened to room temperature

1/2 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

For the S’mores Topping:

1 cup mini marshmallows

1/2 cup milk chocolate chips

1/4 cup crushed graham crackers

Optional: toasted marshmallows for garnish

Instructions

Prepare the Crust: In a medium mixing bowl, combine 1 cup of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/3 cup of melted unsalted butter. Stir well until the mixture resembles wet sand. Divide this crust mixture evenly among each jar, pressing it down gently to form a firm, even base.

Make the Cheesecake Filling: In a large mixing bowl, use an electric mixer to beat 16 oz of softened cream cheese until it's creamy and smooth, about 2-3 minutes. Gradually add in 1/2 cup of powdered sugar, mixing on low speed until combined and no lumps remain. In a separate bowl, whip 1 cup of heavy whipping cream along with 1 teaspoon of vanilla extract until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture using a spatula until fully combined, taking care not to deflate the whipped cream.

Assemble the Jars: Spoon or pipe the cheesecake filling over the crust layer in each jar, filling them to about 3/4 full. Give each jar a gentle tap on the counter to eliminate any air bubbles, ensuring a smooth surface.

Add the Toppings: Top each jar with a generous layer of mini marshmallows, distributing them evenly. Follow this by sprinkling 1/4 cup of crushed graham crackers and 1/2 cup of milk chocolate chips on top.

Toast the Marshmallows: For that perfect s'mores flavor, use a kitchen torch to lightly toast the mini marshmallows until they're golden brown and slightly charred. If you don’t have a kitchen torch, you can alternatively place the jars under a broiler for a minute or two, keeping a close watch to prevent burning.

Chill: Cover the jars with lids or plastic wrap and place them in the refrigerator for at least 2 hours, or preferably overnight. This time allows the flavors to meld beautifully and the cheesecake to set properly.

Serve: When it's time to indulge, you can add extra chocolate chips or more crushed graham crackers on top for garnish. For an extra special touch, toast a few additional marshmallows and place one on top of each jar right before serving.

Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 6-8 jars

Optional Presentation Tips: Consider using clear mason jars for a rustic feel, showcasing the layers. Drizzle some chocolate sauce on top before serving for an elegant finish!
