2 cups vegetable broth (or chicken broth for non-vegetarian option)

1 small onion, finely diced

3 cloves garlic, minced

1 bell pepper (any color), diced into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed to remove excess salt

1 can (15 oz) corn, drained

1 tablespoon taco seasoning (adjustable to taste)

1 teaspoon smoked paprika

1 cup diced tomatoes (fresh or canned, including their juices)

1 cup shredded cheddar cheese (or a flavorful cheese blend of your choice)

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish (optional)

Ripe avocado slices, for serving (optional)

Lime wedges, for an extra zing on the side (optional)

Instructions
 

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Next, add the minced garlic and diced bell pepper. Cook for an additional 2-3 minutes, stirring frequently, until the bell pepper softens.

    Add Quinoa and Liquid: Once the vegetables are softened, stir in the rinsed quinoa, making sure it is well mixed with the onions and peppers. Pour in the vegetable (or chicken) broth and bring the entire mixture to a rolling boil.

      Incorporate Other Ingredients: After boiling, decrease the heat to low. Incorporate the black beans, corn, diced tomatoes, taco seasoning, and smoked paprika into the skillet. Stir everything together well and season with salt and pepper to suit your taste.
