Ingredients

8 oz linguine or fettuccine pasta

1 lb shrimp, peeled and deveined

8 oz smoked sausage, sliced (Andouille or your choice)

1 medium onion, diced

4 cloves garlic, minced

1 bell pepper (red, green, or yellow), diced

1 can (14.5 oz) diced tomatoes with green chilies

2 ½ cups chicken broth

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon dried thyme

½ teaspoon paprika

2 tablespoons olive oil

Salt and pepper to taste

½ cup heavy cream (optional for a creamy version)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions

Sauté the Sausage: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the sliced smoked sausage and sauté until browned, about 4-5 minutes. Once browned, remove the sausage from the pot and set aside to keep it warm.

Cook the Vegetables: In the same pot, add the diced onion and bell pepper. Sauté for approximately 3-4 minutes, or until the vegetables are tender. Add the minced garlic and cook for an additional 30 seconds, or until you can smell its aroma.

Combine the Base: Pour in the can of diced tomatoes (including the juices), chicken broth, Cajun seasoning, dried thyme, and paprika. Use a wooden spoon to stir everything together, bringing the mixture to a gentle simmer.

Add the Pasta: Carefully add the linguine to the pot, making sure it is fully submerged in the liquid. Cover the pot and cook according to the pasta package instructions, typically about 10-12 minutes, stirring occasionally to prevent sticking.

Incorporate Shrimp and Sausage: When the pasta is nearly at al dente, add the reserved browned sausage and the peeled and deveined shrimp to the pot. If you choose to make a creamy version, stir in the heavy cream at this stage. Allow it to cook for another 3-5 minutes, or until the shrimp become pink and opaque, gently stirring to combine with the other ingredients.

Season to Taste: After cooking, taste the pasta dish and adjust the seasoning with salt, pepper, or more Cajun seasoning to suit your preference.

Finishing Touches: Once finished, remove from heat and let the dish sit for a few minutes to thicken up slightly. Serve the pasta in bowls, garnished with fresh chopped parsley and a sprinkle of grated Parmesan cheese, if desired.

                - Serving Suggestions: This dish is perfect for a hearty dinner! Pair it with a side salad or garlic bread for a complete meal. Enjoy the vibrant flavors of your one-pot Cajun pasta!
