1 tablespoon olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 pound ground beef or turkey

1 packet taco seasoning mix

1 can (15 oz) diced tomatoes with green chilies

4 cups chicken or vegetable broth

12 ounces spaghetti

1 can (15 oz) black beans, thoroughly drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese (reserve extra for topping)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced avocado (for topping)

Lime wedges (for serving)

Instructions
 

Sauté Aromatics: In a large pot, pour in the olive oil and heat over medium flame. Add the diced onion and sauté for approximately 3-4 minutes, or until it turns translucent and soft. Then, incorporate the minced garlic, stirring for an additional 1-2 minutes until its aroma fills the air.

    Brown the Meat: Introduce the ground beef or turkey to the pot, using a spatula to break it into small pieces. Sauté until the meat is thoroughly browned, roughly 5-7 minutes. If there’s excess fat, drain it off to keep the dish from becoming greasy.

      Season & Add Ingredients: Sprinkle in the taco seasoning and stir well to coat the meat. Follow with the diced tomatoes (including their juices) and pour in the chicken or vegetable broth. Mix everything together until well combined.

        Cook the Spaghetti: Increase the heat to bring the mixture to a rolling boil. Carefully add the spaghetti and stir to immerse it in the liquid. Lower the heat to a gentle simmer, cover the pot with a lid, and let it cook for about 10-12 minutes, stirring occasionally until the spaghetti is al dente.
