1 cup grated zucchini (approximately 1 medium zucchini, thoroughly squeezed dry)

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

3 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (ensure they are dairy-free if strictly following Paleo)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, allowing some overhang to facilitate easy removal of the brownies after baking.

    Prepare the Zucchini: Grate the zucchini with either a box grater or a food processor. Transfer the grated zucchini to a clean kitchen towel and twist the towel to wring out as much moisture as possible; this step is crucial for the texture of the brownies.

      Mix the Dry Ingredients: In a large mixing bowl, combine the almond flour, cocoa powder, baking soda, and salt. Whisk them together until evenly blended.

        Combine the Wet Ingredients: In a separate bowl, mix together the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract. Use a whisk or fork to mix until the mixture is smooth and well combined.

          Combine Mixtures: Gently pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix. Then, fold in the prepared grated zucchini and the dark chocolate chips. If desired, you can also add in chopped nuts or shredded coconut at this stage.
