4 large flour tortillas

2 ripe peaches, thinly sliced

1 cup shredded mozzarella cheese

1 cup cream cheese, softened to room temperature

2 tablespoons honey

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon butter (for cooking)

Fresh mint leaves (for garnish, optional)

Prepare the Cream Cheese Mixture: In a small mixing bowl, whisk together the softened cream cheese, honey, vanilla extract, and ground cinnamon until the mixture is smooth and fully combined. This will create a sweet and creamy spread.

    Assemble the Quesadillas: On a clean work surface, place two flour tortillas. Evenly distribute half of the cream cheese mixture onto each tortilla, spreading it to the edges. Next, layer the thinly sliced peaches atop the cream cheese, then generously sprinkle shredded mozzarella cheese over the peaches. Place the remaining tortillas on top to create two sandwich-like quesadillas.

      Cook the Quesadillas: Heat a large skillet over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the bottom of the pan. Carefully place one quesadilla in the skillet. Cook for approximately 3-4 minutes until the bottom is golden brown and the cheese begins to melt. Flip the quesadilla and cook for an additional 3-4 minutes on the other side until golden brown. Repeat this process with the second quesadilla.

        Slice and Serve: Once cooked, remove the quesadillas from the skillet and let them cool for about a minute. Using a sharp knife or pizza cutter, slice each quesadilla into wedges.
