Peach Tea Granita

4 ripe peaches, pitted and chopped into small pieces

2 cups brewed black tea, cooled (sweetened or unsweetened as per your taste)

1/2 cup granulated sugar (adjust based on the sweetness of the peaches)

Juice of 1 fresh lemon

1 teaspoon pure vanilla extract

Fresh mint leaves, for garnish (optional)

Prepare the Tea: Begin by brewing 2 cups of black tea using your preferred method. If you desire a sweeter granita, feel free to add sugar while the tea is still hot, then assume to cool it to room temperature or chill it in the refrigerator.

    Blend the Peaches: While the tea is cooling, wash and chop the peaches into small pieces. Place them in a blender or food processor, and blend until smooth. If you'd like to preserve some texture in your granita, pulse the peaches a few times instead of blending completely.

      Mix the Ingredients: In a large mixing bowl, combine the smooth peach puree, cooled tea, granulated sugar, lemon juice, and vanilla extract. Stir thoroughly until the sugar is fully dissolved. Taste the mixture and adjust the sweetness with extra sugar or acidity with more lemon juice if necessary.

        Freeze the Mixture: Pour the flavored mixture into a shallow dish, preferably metal, for quicker freezing. Spread it out evenly, then place the dish in the freezer.

          Scrape the Granita: After about 30 minutes, take the dish out of the freezer. Using a fork, gently scrape the surface of the mixture to create fluffy, ice-crystal-like textures. Return it to the freezer. Continue this scraping process every 30 minutes for a total of 2 to 3 hours until the entire mixture is light and fluffy.

            Serve: When your granita is achieved with the ideal icy texture, use a spoon to scoop it into serving bowls. For an added touch, garnish with fresh mint leaves if you wish, and relish your deliciously refreshing summer treat!
