Ingredients

1 cup rolled oats

1 ripe banana, thoroughly mashed

1/2 cup natural peanut butter (smooth or chunky for texture)

1/4 cup honey or maple syrup (whichever you prefer)

1/2 cup protein powder (choose vanilla for sweetness or chocolate for a richer flavor)

1/4 cup dark chocolate chips (optional, but recommended for a delightful touch)

1/4 teaspoon sea salt

1 teaspoon pure vanilla extract

1/4 cup mixed nuts or seeds (optional; choose your favorites for an added crunch)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, allowing for easy removal after baking.

Mix Wet Ingredients: In a large mixing bowl, add the thoroughly mashed banana, peanut butter, honey (or maple syrup), and vanilla extract. Using a fork or whisk, mix until the mixture is smooth and uniformly blended without any lumps.

Incorporate Dry Ingredients: Gradually add the rolled oats, protein powder, sea salt, and the mixed nuts or seeds (if you're using them) into the wet mixture. Stir with a spatula or wooden spoon until everything is well combined. If you're opting for chocolate chips, gently fold them into the mixture at this stage.

Prepare the Baking Pan: Pour the combined mixture into the lined baking pan. Using a spatula or your hands, firmly press the mixture down until it is even and compacted across the base of the pan. This will help the bars hold together once baked.

Bake the Mixture: Place the pan in the preheated oven and bake for 15 to 20 minutes. Keep an eye on the edges; they should turn a golden brown while the center looks firm and set.

Cool and Cut: After baking, carefully remove the pan from the oven and allow it to cool completely while still in the pan. Once cooled, grasp the edges of the parchment paper to lift the whole batch out, then cut into squares or bars depending on your preferred size.

Store the Bars: For optimal freshness, store the protein bars in an airtight container in the refrigerator, where they’ll last for up to a week. Alternatively, you can freeze them for a longer storage option.
