2 cups cooked chicken breast, shredded or diced

1 cup cucumber, diced into small pieces

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

¾ cup feta cheese, crumbled

¼ cup plain Greek yogurt

2 tablespoons olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

1 teaspoon dried oregano

Salt and freshly ground black pepper to taste

4 large whole wheat wraps or pita bread

Fresh spinach or mixed greens (optional for added crunch)

Instructions
 

In a large mixing bowl, combine the shredded chicken, diced cucumber, halved cherry tomatoes, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese. Gently stir to mix all ingredients evenly.

    In a separate small bowl, whisk together the plain Greek yogurt, olive oil, red wine vinegar, fresh lemon juice, dried oregano, and season with salt and pepper. Mix until the dressing is smooth and all ingredients are well blended.

      Pour the creamy dressing over the chicken mixture in the large bowl. Carefully toss everything together until the chicken and vegetables are thoroughly coated with the dressing.

        To prepare the wraps, warm the whole wheat wraps or pita bread in a dry skillet over medium heat. Heat for about 30 seconds on each side, or until they become pliable and warm to the touch.

          To assemble the wraps, lay down a generous portion of the chicken salad mixture in the center of each wrap.

            If using, add a handful of fresh spinach or mixed greens over the chicken mixture for an extra layer of flavor and crunch.

              Fold in the sides of the wrap securely, then roll it tightly from the bottom up. Make sure to keep the filling well enclosed within the wrap.
