1/4 cup honey or maple syrup (for a vegan option, use maple syrup)

1/4 cup peanut butter or almond butter (creamy or crunchy based on preference)

1/2 teaspoon pure vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/2 cup chopped nuts (choose from walnuts, pecans, or almonds)

1/2 cup dried cranberries or raisins (or a mix of both)

Optional: 1/4 cup chocolate chips (for added sweetness and indulgence)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). While it's heating, line a baking sheet with parchment paper to prevent sticking and make clean up a breeze.

    Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), peanut butter, and vanilla extract. Use a spatula or whisk to blend them together until the mixture is smooth and fully integrated.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, pumpkin pie spice, and salt. Then, fold in the chopped nuts and dried cranberries (or raisins) plus the optional chocolate chips if desired.

        Blend Wet and Dry: Gradually incorporate the dry ingredient mix into the wet mixture, stirring as you go until all the ingredients are evenly coated with the pumpkin mixture.

          Form Clusters: Using clean hands or a spoon, scoop out portions of the mixture and form clusters roughly the size of a golf ball. Place these clusters onto the prepared baking sheet, ensuring to space them out. Lightly press each cluster down to flatten them slightly for even baking.
