1/4 cup coconut oil, melted

1 teaspoon pumpkin pie spice (or a blend of cinnamon, nutmeg, and ginger)

Pinch of salt

1/4 cup raisins or chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper. This will prevent the cookies from sticking and make for easy cleanup.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir thoroughly until the mixture is smooth and well-blended, ensuring all ingredients are fully integrated.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, almond flour, baking powder, pumpkin pie spice, and a pinch of salt. Stir well to break up any clumps, ensuring an even distribution of the dry ingredients.

        Combine Mixtures: Gradually fold the dry mixture into the wet mixture, stirring continuously until everything is fully incorporated. If you’re using raisins or chocolate chips, as well as the chopped nuts, gently fold them into the dough to enhance texture and flavor.
