Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) fresh mushrooms, sliced (such as cremini or button)

1 cup beef broth (low sodium recommended)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream, at room temperature

1 tablespoon cornstarch (optional, for thickening)

Salt and black pepper, to taste

8 oz (225g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: Begin by bringing a large pot of salted water to a rolling boil. Once boiling, add the egg noodles and cook according to the package instructions until al dente, usually about 7-9 minutes. Drain the noodles in a colander and set aside, giving them a quick rinse under cold water if desired to prevent sticking.

Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the sliced beef sirloin, seasoning generously with salt and pepper. Sauté the beef for approximately 2-3 minutes, or until browned. Be careful not to overcrowd the pan; work in batches if necessary. When cooked, remove the beef from the skillet and place it on a plate.

Sauté the Vegetables: In the same skillet, reduce the heat to medium, then add the chopped onion and minced garlic. Sauté for about 2-3 minutes, stirring frequently, until the onions become translucent and fragrant. Now add the sliced mushrooms and continue cooking for an additional 5 minutes, or until the mushrooms are tender and golden brown.

Make the Sauce: With the vegetables cooked, lower the heat to medium and return the sautéed beef to the skillet. Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir to combine and let the mixture simmer gently for about 5 minutes, allowing the flavors to meld together. If you prefer a thicker sauce, mix the cornstarch with a few tablespoons of cold water to create a slurry, then stir this into the skillet to thicken the sauce slightly.

Combine with Sour Cream: Remove the skillet from heat and slowly fold the sour cream into the beef and sauce mixture until fully incorporated. Taste the sauce and adjust the seasoning with additional salt and pepper as needed.

Serve: Gently toss the cooked egg noodles into the skillet, ensuring they are well coated with the creamy beef stroganoff sauce. Mix well to combine all elements.

Garnish and Enjoy: Dish out the beef stroganoff on individual plates, or serve family-style. Top each serving with a sprinkle of freshly chopped parsley for a vibrant touch and added flavor.

Optional Presentation Tips: Serve in deep bowls to capture the sauce, and add a sprinkle of pepper and a few extra mushrooms on top for elegance. Pair it with crusty bread or a simple green salad for a complete meal.
