Quick Beef and Bean Chili for Families

1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 jalapeño, diced (adjust based on your spice preference)

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

2 cups beef broth

2 tablespoons olive oil

Optional toppings: sour cream, shredded cheese, chopped green onions, fresh cilantro

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, minced garlic, diced red bell pepper, and diced jalapeño. Sauté the mixture for about 5 minutes or until the onions are translucent and the bell peppers have softened.

    Brown the Beef: Push the sautéed vegetables to one side of the pot. Add the ground beef to the empty space and cook for about 6-8 minutes, breaking it apart with a spoon. Cook until the beef is browned and no longer pink. If there’s excess fat, drain it off.

      Add Spices and Beans: Incorporate the chili powder, ground cumin, smoked paprika, salt, and black pepper into the beef mixture, stirring well to combine. Next, add the rinsed kidney beans, black beans, and the can of diced tomatoes with their juices, followed by the beef broth. Mix everything together thoroughly.

        Simmer the Chili: Increase the heat to bring the chili to a boil, then reduce it to low. Allow the chili to simmer uncovered for 20-25 minutes, stirring occasionally to prevent sticking and ensure even cooking.

          Taste and Adjust: After simmering, taste the chili for seasoning. Feel free to add more chili powder or a dash of hot sauce if you prefer a spicier flavor. Adjust salt and pepper as needed.
