Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

1 large red bell pepper, cut into thin strips

1 large yellow bell pepper, cut into thin strips

1 medium onion, slenderly sliced

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (for cooking)

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice or noodles (for serving)

Sliced green onions (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Beef: In a mixing bowl, combine the thinly sliced beef sirloin with soy sauce, oyster sauce, and cornstarch. Stir the mixture until the beef is evenly coated. Allow it to marinate for at least 15 minutes to enhance the flavor while you prepare the other ingredients.

Prep the Vegetables: Clean and slice the bell peppers into thin strips, slice the onion, and mince the garlic. Arrange all the prepped vegetables on a plate and set aside for easy access during cooking.

Heat the Pan: Place a large skillet or wok on the stove and add 1 tablespoon of vegetable oil. Heat the oil over high heat until it starts to shimmer, ensuring it's hot enough for a good sear.

Cook the Beef: Carefully add the marinated beef to the hot skillet, spreading it out in a single layer. Avoid overcrowding the pan to ensure proper browning. Sear the beef for about 2-3 minutes until it develops a golden-brown crust, then flip the pieces over and cook for an additional 1-2 minutes. Once done, transfer the beef to a plate and set aside.

Stir-Fry the Vegetables: In the same skillet, pour in the remaining tablespoon of vegetable oil. Add the sliced onion and minced garlic, stirring for approximately 30 seconds until they become fragrant. Next, toss in the bell pepper strips, continuing to stir-fry for about 4-5 minutes until they're tender yet still retain a slight crispness.

Combine and Finish Cooking: Return the beef to the skillet with the sautéed vegetables. Gently toss everything together to combine, then drizzle with sesame oil. Season the mixture with salt and pepper to taste. Allow it to cook for another 1-2 minutes until everything is heated through and well incorporated.

Serve: Scoop the sizzling beef and bell pepper mixture over a hearty bed of cooked rice or noodles. For an appealing finish, garnish with fresh slices of green onions and a sprinkle of sesame seeds.
