1 cup mixed vegetables (such as diced carrots, peas, bell peppers, and sweet corn)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup milk (whole or low-fat)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup grated Parmesan cheese (for topping)

Fresh parsley or chives, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) so it’s ready for baking when you finish mixing.

    Prepare Vegetables: If you’re using fresh vegetables, make sure to wash and chop them into small, uniform pieces. If you opt for frozen mixed vegetables, ensure they are fully thawed and well-drained before adding to the mixture.

      Mix Ingredients: In a substantial mixing bowl, combine the cooked rice, prepared mixed vegetables, and both the shredded cheddar and mozzarella cheeses. Stir well to evenly distribute the cheese and vegetables throughout the rice.

        Create the Egg Mixture: In a separate bowl, whisk together the milk, eggs, garlic powder, onion powder, dried oregano, along with a pinch of salt and pepper until the mixture is smooth and well-blended.

          Combine: Pour the egg mixture over the rice and vegetable mix. Use a spatula or large spoon to gently fold everything together until all components are evenly coated and incorporated.
