Ingredients

1 can (15 oz) chickpeas, drained and rinsed thoroughly

2 cups fresh spinach, roughly chopped

2 tablespoons extra virgin olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, peeled and minced

1 teaspoon red chili flakes (adjust according to your spice preference)

1 teaspoon ground cumin

1 tablespoon soy sauce (or tamari for a gluten-free option)

1 tablespoon freshly squeezed lemon juice

Salt and freshly cracked black pepper to taste

Cooked rice or quinoa, for serving (optional)

Fresh cilantro leaves, for garnish (optional)

Instructions

Heat the Oil: In a large skillet or wok, heat the extra virgin olive oil over medium-high heat until shimmering.

Sauté Aromatics: Once the oil is hot, add the minced garlic and ginger. Stir frequently for about 1 minute, allowing them to release their fragrant aroma, but be careful not to let them brown or burn.

Add Chickpeas: Carefully toss in the drained chickpeas. Stir-fry for approximately 3-4 minutes, or until they are heated through and begin to develop a slightly crispy exterior.

Spice It Up: Sprinkle the red chili flakes and ground cumin over the chickpeas. Mix thoroughly to coat each chickpea with the spices, cooking for an additional 2-3 minutes to enhance the flavors.

Mix in Spinach: Add the roughly chopped spinach to the skillet. Stir continuously until the spinach wilts, which should take about 2 minutes.

Season: Drizzle the soy sauce and lemon juice over the chickpea and spinach mixture. Stir well to combine, and season with salt and freshly cracked black pepper to taste. Adjust the spice levels to your preference at this point.

Serve: Remove the skillet from heat. Serve the zesty chickpea and spinach mixture over a bed of cooked rice or quinoa, if desired. Garnish with fresh cilantro leaves for a burst of color and flavor.
