Quick Teriyaki Salmon with Rice and Broccoli

4 salmon fillets (6 oz each)

½ cup low-sodium soy sauce

¼ cup honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, finely minced

1 tablespoon fresh ginger, freshly grated

2 cups jasmine rice

4 cups broccoli florets

2 tablespoons sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Prep the Marinade: In a medium mixing bowl, thoroughly whisk together the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger until the mixture is well incorporated and smooth.

    Marinate the Salmon: Place the salmon fillets skin-side down in a shallow dish. Pour half of the prepared marinade over the salmon, ensuring they are well-coated. Allow the salmon to marinate for a minimum of 15 minutes, or for a more intense flavor, refrigerate for up to 1 hour.

      Cook the Rice: As the salmon marinates, prepare the jasmine rice. Rinse the rice under cold running water until the water appears clear to remove excess starch. In a medium saucepan, combine the rinsed rice with 4 cups of water and a pinch of salt. Bring the mixture to a boil, then reduce the heat to low, cover with a lid, and let it simmer for approximately 15 minutes, or until the rice is tender and all the water is absorbed.

        Steam the Broccoli: About 5 minutes before the rice finishes cooking, bring a pot of water to a boil. Set a steaming basket over the boiling water and add the broccoli florets. Cover and steam the broccoli for 5 minutes, or until it turns a vibrant green and is tender yet still crisp. Once done, remove from heat and set aside.

          Cook the Salmon: Preheat your grill or a stovetop skillet over medium-high heat. Take the salmon out of the marinade (discard the marinade used for marinating) and season with salt and pepper. Grill the salmon for about 4-5 minutes per side, or until the center of the fillet is opaque and easily flakes with a fork.

            Prepare the Glaze: In a small saucepan, pour the remaining marinade that wasn’t used for the salmon. Bring it to a boil over medium heat, then reduce the heat slightly and let it simmer for 3-4 minutes, or until the sauce thickens slightly. Brush this flavorful glaze over the cooked salmon fillets.

              Serve: Fluff the jasmine rice with a fork and evenly distribute it among four plates. Place the teriyaki salmon fillets atop the bed of rice and arrange the steamed broccoli alongside. Drizzle the salmon with any additional glaze and generously sprinkle with sesame seeds and sliced green onions for a fresh finish.
