2 large eggs

1 cup granulated sugar

1/4 cup freshly squeezed lemon juice (approximately 2 lemons)

1 teaspoon lemon zest (grated from fresh lemons)

1/2 cup fresh raspberries, mashed (plus additional for garnish)

1 tablespoon cornstarch

Extra powdered sugar (for dusting at the end)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking dish by lining it with parchment paper, leaving some overhang on the sides. This will make it easier to lift the bars out later. Lightly grease the parchment paper for added non-stick assurance.

    Prepare the Crust: In a mixing bowl, combine the all-purpose flour, powdered sugar, softened butter, and salt. Use a pastry cutter, or your fingertips, to blend the mixture until it resembles coarse crumbs; it should be crumbly but not dry. Firmly press this mixture into an even layer across the bottom of your prepared baking dish.

      Bake the Crust: Place the crust in the preheated oven and bake for approximately 15 minutes, or until it turns a light golden hue. Remove from the oven and set aside to cool slightly while you prepare the filling.

        Make the Filling: In a separate bowl, whisk together the eggs, granulated sugar, freshly squeezed lemon juice, lemon zest, and mashed raspberries until everything is well blended. In a small bowl, mix the cornstarch with a tablespoon of the raspberry mixture to create a slurry, which will help prevent lumps.
