Raspberry Swirl Mousse Bites

1 cup heavy whipping cream

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

8 ounces cream cheese, softened to room temperature

1/2 cup fresh raspberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the Chocolate Base:

1 cup chocolate cookie crumbs (such as crushed Oreos)

4 tablespoons unsalted butter, melted

Instructions
 

Prepare the Chocolate Base:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chocolate cookie crumbs with the melted butter. Stir until the crumbs are evenly coated and resemble wet sand.

        - Firmly press the mixture into the bottom of silicone molds or a mini muffin tin to form an even layer. Bake in the preheated oven for 5-7 minutes, then remove and allow to cool completely while you prepare the mousse.

          Make the Raspberry Swirl:

            - In a small saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Cook for about 5 minutes, gently mashing the raspberries with a fork or wooden spoon to release their juices, until the mixture thickens to a syrupy consistency. Remove from heat and let it cool slightly.

              Prepare the Mousse:

                - In a clean mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, mixing until stiff peaks are achieved.
