1 cup sharp cheddar cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup milk (dairy or non-dairy alternative)

1/4 cup chopped fresh parsley (or 2 tablespoons if using dried)
