2 large heads of garlic

2 tablespoons olive oil, plus extra for drizzling

1 teaspoon dried thyme

1 teaspoon dried oregano

1 medium zucchini, thinly sliced

1 red bell pepper, sliced into strips

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup crumbled feta cheese (omit for a vegan version)

4 flatbreads or pita breads

Salt and freshly ground black pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the tops off the heads of garlic to expose the individual cloves. Drizzle olive oil over the exposed cloves, then wrap the heads in aluminum foil. Roast in the oven for 30-35 minutes, or until the garlic becomes soft and caramelized. Once done, allow it to cool slightly, then carefully squeeze each clove into a bowl and mash into a smooth paste.

    Prepare the Vegetables: In a large mixing bowl, add the sliced zucchini, red bell pepper strips, halved cherry tomatoes, and fresh spinach leaves. Drizzle with olive oil and season with dried thyme, oregano, salt, and freshly ground black pepper. Toss everything together until the vegetables are evenly coated with the oil and seasonings.

      Assemble the Flatbreads: Take each flatbread and spread a generous amount of the roasted garlic paste over the surface. Layer the seasoned vegetable mixture on top of the garlic spread, then add crumbled feta cheese if you're including it.
