Ingredients

4 ripe peaches, halved and pitted

2 tablespoons extra virgin olive oil, plus more for drizzling

1 tablespoon honey

Sea salt and freshly cracked black pepper, to taste

5 ounces burrata cheese, preferably at room temperature

4 cups mixed greens (such as arugula, spinach, and frisée)

1/4 cup toasted walnuts, roughly chopped

1/4 cup thinly sliced prosciutto (optional for a savory touch)

2 tablespoons balsamic glaze for finishing

Fresh basil leaves, for garnish

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting the peaches.

Prepare the Peaches: In a large mixing bowl, combine the peach halves with the olive oil, honey, a generous pinch of sea salt, and freshly cracked black pepper. Toss gently until the peaches are well-coated with the mixture.

Roast the Peaches: Arrange the peach halves cut side up on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20 minutes, or until the peaches are tender and have developed a beautiful caramelization. Once roasted, remove them from the oven and let them cool slightly.

Assemble the Salad Base: While the peaches are cooling, take a large salad bowl and add the mixed greens. Drizzle a bit of olive oil over them along with a sprinkle of salt. Toss gently to coat the greens evenly.

Layer with Burrata: Place the warm roasted peach halves atop the tossed greens. Add generous spoonfuls of creamy burrata cheese over the peaches, allowing it to nestle into the greens. If desired, layer the prosciutto slices over the burrata for a delightful savory component.

Add Crunch and Flavor: Scatter the roughly chopped toasted walnuts over the entire salad, providing a satisfying crunch and nutty flavor.

Finish with Balsamic Glaze: Drizzle balsamic glaze generously over the salad, enhancing its color and flavor profile. Top with fresh basil leaves for a fragrant garnish.

Serve Immediately: For the best experience, serve the salad immediately while the peaches are warm and the burrata is at its creamiest.
