2 large red bell peppers

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1/2 teaspoon garlic powder

Salt and black pepper to taste

200g feta cheese, crumbled

1/4 cup fresh basil leaves, finely chopped

1/4 teaspoon red pepper flakes (optional for spice)

4 slices of crusty bread (such as sourdough or ciabatta)

Extra virgin olive oil, for drizzling

Roast the Peppers: Begin by preheating your oven to 425°F (220°C). Carefully cut the red bell peppers in half and remove the seeds and stems. Place the halved peppers, cut side down, on a baking sheet lined with parchment paper. Drizzle the olive oil generously over them and sprinkle with salt and black pepper. Roast in the oven for 25-30 minutes, or until the skins are blistered and charred.

    Remove Skins: Once the peppers are done roasting, take them out of the oven and transfer them to a bowl. Cover the bowl with plastic wrap or a kitchen towel for about 10 minutes to allow the peppers to steam. This process will help loosen the skins. After they’ve cooled enough to handle, peel off the charred skins and slice the peppers into strips.
