2 medium zucchinis, sliced into thin strips (about 1/4 inch thick)

Salt and black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup Greek yogurt (or a non-dairy alternative)

1 tablespoon tahini

Juice of 1 fresh lemon

1 cup fresh spinach leaves, washed and dried

1/2 cup cherry tomatoes, halved (optional for added sweetness)

1/4 cup crumbled feta cheese (optional for a tangy finish)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to ensure it’s hot and ready for roasting.

    Prepare the Vegetables and Chickpeas: On a large baking sheet, arrange the zucchini strips and chickpeas in a single layer. Drizzle with olive oil, and sprinkle with smoked paprika, garlic powder, ground cumin, salt, and pepper. Toss everything well to ensure the strips and chickpeas are evenly coated with the seasoning.
