Salmon Tacos with Mango Slaw

1 lb (450g) fresh salmon fillet, skin removed

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Sea salt and freshly ground black pepper, to taste

Juice of 1 lime

For the Mango Slaw:

1 ripe mango, peeled and diced into small cubes

2 cups shredded green cabbage

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (or substitute with agave syrup for a vegan option)

Sea salt and freshly ground black pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges for serving

Extra cilantro leaves for garnish

Prepare the Salmon Marinade: In a small mixing bowl, combine the olive oil, chili powder, ground cumin, garlic powder, smoked paprika, salt, pepper, and lime juice. Mix well until the marinade is smooth. Place the salmon fillet in a shallow dish or resealable plastic bag and pour the marinade over it, ensuring the salmon is well coated. Cover and let it marinate in the refrigerator for at least 20 minutes to absorb the flavors.

    Make the Mango Slaw: In a large mixing bowl, combine the diced mango, shredded cabbage, shredded carrots, sliced red onion, and chopped cilantro.
