Ingredients

4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

Salt and pepper, to taste

1 medium onion, thinly sliced

2 medium apples (Granny Smith or Honeycrisp), cored and sliced into wedges

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon ground cinnamon

½ cup apple cider (preferably fresh)

1 tablespoon Dijon mustard

2 tablespoons brown sugar

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pork Chops: Begin by patting the pork chops dry with paper towels to enhance browning. Generously season both sides with salt and freshly ground black pepper.

Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Carefully place the pork chops in the skillet, and sear them for about 4-5 minutes on each side, or until they develop a beautiful golden-brown crust. Once seared, transfer the pork chops to a plate and set aside.

Sauté the Onions and Apples: Utilize the same skillet for added flavor. Add the thinly sliced onions and apple wedges to the pan. Sauté for around 4-5 minutes, stirring occasionally, until the onions are translucent and the apples start to soften.

Infuse with Aromatics: Stir in the minced garlic, fresh thyme, and ground cinnamon. Cook for an additional minute, allowing the spices to toast and release their fragrant aromas.

Create the Sauce: Pour the apple cider into the skillet, then mix in the Dijon mustard, brown sugar, and balsamic vinegar. Stir well to combine all the ingredients, bringing the mixture to a gentle simmer.

Return the Pork Chops: Place the seared pork chops back into the skillet, ensuring to spoon some of the sauce over the top. Lower the heat to low, cover the skillet, and let it simmer for about 10-15 minutes, or until the pork chops are cooked through (reaching an internal temperature of 145°F or 63°C).

Thicken the Sauce (Optional): If you desire a thicker sauce, remove the pork chops after they are cooked. Increase the heat to medium-high and let the sauce reduce for 2-3 minutes, stirring occasionally, until it thickens slightly.

Serve: Arrange the pork chops on serving plates, generously topping them with the saucy apple mixture. Garnish with freshly chopped parsley for a pop of color and additional flavor.

Enjoy! Serve these delightful pork chops with your favorite sides such as creamy mashed potatoes, fragrant rice, or vibrant steamed vegetables.
