1 lb (450g) breakfast sausage (choose pork, turkey, or your favorite alternative)

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp black pepper

½ tsp salt (or to taste)

½ tsp dried thyme

4 large eggs

2 tbsp olive oil

Fresh parsley or chives, chopped (for garnish)

Hot sauce (optional, for serving)

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, then season with salt, black pepper, and smoked paprika. Stir to coat the potatoes evenly. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are fork-tender and develop a crispy exterior.

    Prepare the Sausage: While the potatoes are cooking, take a separate pan and heat the remaining tablespoon of olive oil over medium heat. Add the breakfast sausage and cook, breaking it apart with a spatula, until it is browned and fully cooked.
