1 lb ground beef (preferably lean)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 medium yellow onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, with their juices

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp dried oregano

1/4 tsp cayenne pepper (adjust based on heat preference)

Salt and black pepper, to taste

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions, diced avocado

Instructions
 

Heat the Pan: In a large pot or Dutch oven, add the olive oil and heat it over medium heat until shimmering.

    Sauté Aromatics: Introduce the diced onion and red bell pepper to the pot. Sauté for about 3-4 minutes, stirring occasionally, until they become tender. Add the minced garlic and cook for an additional 1 minute, stirring continuously, until the garlic is fragrant and lightly golden.

      Brown the Beef: Raise the heat to medium-high and add the ground beef to the pot. Cook the beef until it's fully browned, breaking it apart with a spoon to ensure even cooking, about 5-6 minutes. If there’s excess fat, carefully drain it off to keep the chili from becoming greasy.

        Spice it Up: Mix in the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, along with salt and black pepper. Stir the ingredients well and cook for an additional 1-2 minutes; this will help the spices to bloom and release their flavors.
