Ingredients

1 medium sweet potato, peeled and diced into 1/2-inch cubes

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: diced red onion, crumbled feta or cotija cheese, hot sauce

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.

Prepare Sweet Potatoes: In a large baking sheet, place the diced sweet potatoes and drizzle them with olive oil. Sprinkle the ground cumin, smoked paprika, garlic powder, salt, and pepper over the veggies. Use your hands or a spoon to toss everything together until the sweet potatoes are evenly coated. Make sure to spread them in a single layer for optimal roasting.

Roast Sweet Potatoes: Place the baking sheet in the preheated oven and roast the sweet potatoes for 20-25 minutes. Halfway through the cooking time, give them a gentle toss to ensure they roast evenly, until they're tender and lightly browned.

Heat Black Beans: While the sweet potatoes are roasting, take a small saucepan and add the rinsed black beans. Heat over low to medium heat, adding a pinch of salt and pepper. Stir occasionally and allow them to warm through for approximately 5 minutes.

Warm Tortillas: In a skillet or griddle over medium heat, warm each tortilla for about 30 seconds on each side, or until they're soft and pliable. This step enhances their flavor and texture.

Assemble Tacos: To create your tacos, place a generous spoonful of the roasted sweet potatoes on each warmed tortilla. Follow this by adding a scoop of the warmed black beans on top.

Add Toppings: Layer on slices of creamy avocado and a sprinkle of freshly chopped cilantro for a burst of flavor. Finish off each taco with a squeeze of fresh lime juice to elevate the taste.

Serve: Serve the tacos warm, accompanied by optional toppings such as diced red onion, crumbled feta or cotija cheese, and your favorite hot sauce for those who love a bit of extra spice.
