Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon freshly cracked black pepper

1/2 cup cold unsalted butter, cut into small cubes

1 cup sharp cheddar cheese, shredded

1/4 cup fresh chives, finely chopped

3/4 cup whole milk

1 large egg (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and freshly cracked black pepper. Whisk these ingredients together until they are fully incorporated and no lumps remain.

Cut in the Butter: Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter, fork, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs, with pea-sized pieces of butter remaining for that flaky texture.

Incorporate Cheese and Chives: Gently fold in the shredded sharp cheddar cheese and the finely chopped fresh chives into the flour mixture, ensuring they are evenly distributed throughout.

Whisk the Wet Ingredients: In a separate bowl, whisk together the whole milk and the egg until they are well blended and creamy.

Form the Dough: Create a well in the center of the dry mixture and gradually pour in the milk and egg mixture. Using a fork, gently mix until the ingredients are just combined; avoid overmixing as the dough should remain slightly sticky.

Shape the Scones: Lightly flour a clean surface and turn the dough out. With gentle hands, knead it just a couple of times to bring it together. Pat the dough into a circle approximately 1 inch thick. Cut the circle into 8 equal wedges and carefully place them on the prepared baking sheet, ensuring space between each wedge.

Brush with Egg Wash: In a small bowl, beat the remaining egg and brush a thin layer over the tops of each scone to achieve a beautiful golden finish when baked.

Bake to Perfection: Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the scones are puffed up and golden brown on top.

Cool and Serve: Once baked, remove the scones from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely. Enjoy these delightful scones warm or at room temperature!
