2 cups uncooked white rice

4 cups low-sodium chicken broth

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups fresh spinach, chopped

1 cup frozen peas and carrots (or fresh if available)

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Set your oven temperature to 375°F (190°C) to allow it to preheat while you prepare the other ingredients.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Once hot, add the bite-sized chicken pieces, seasoning them evenly with salt, black pepper, dried thyme, and paprika. Cook for approximately 5-7 minutes, stirring occasionally until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Aromatics: In the same skillet, add the chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant, stirring frequently to prevent burning.

        Combine Ingredients: In a large mixing bowl, combine the uncooked white rice, low-sodium chicken broth, chopped fresh spinach, and frozen peas and carrots.
