Savory Lentil and Sausage Shepherd’s Pie

1 cup green or brown lentils, thoroughly rinsed

1 lb Italian sausage (your choice of mild or spicy)

1 medium onion, finely diced

2 medium carrots, diced into small pieces

2 celery stalks, diced

3 cloves garlic, minced

1 cup mushrooms, chopped

1 cup vegetable broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (homemade or store-bought)

1 cup grated cheese (cheddar or your preference, optional)

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Lentils: In a medium-sized pot, combine the rinsed lentils with 3 cups of water. Bring the mixture to a rolling boil, then reduce the heat to low and let it simmer until the lentils are tender, approximately 25-30 minutes. Once cooked, drain the lentils and set them aside.

    Brown the Sausage: In a large skillet set over medium heat, add the Italian sausage. Cook it until it is browned and fully cooked through, breaking it into small pieces with a spatula as it cooks. Once browned, remove the sausage from the skillet and set it aside, leaving the rendered fat in the pan for sautéing the vegetables.

      Sauté the Vegetables: In the same skillet, add the diced onion, carrots, and celery. Sauté the vegetables for about 5-7 minutes, or until they have softened. Add the minced garlic and chopped mushrooms to the skillet, continuing to cook for another 5 minutes until the mushrooms have released their moisture and are tender.

        Combine Ingredients: Return the cooked sausage to the skillet, followed by the prepared lentils. Pour in the vegetable broth, then stir in the tomato paste, Worcestershire sauce, dried thyme, dried rosemary, and season the mixture with salt and pepper. Allow the filling to simmer for approximately 10 minutes, allowing the flavors to meld and the mixture to thicken slightly.

          Layer the Pie: Preheat your oven to 400°F (200°C). In a suitable baking dish, spread the lentil and sausage mixture evenly across the bottom. Carefully spoon the mashed potatoes on top, smoothing them out with a spatula to create an even layer. If desired, sprinkle the grated cheese over the mashed potatoes for added richness.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is beautifully golden and crispy.

              Garnish and Serve: Once baking is complete, remove the dish from the oven and let it cool for a few minutes. Just before serving, garnish your Shepherd's Pie with freshly chopped parsley for a pop of color and flavor. Enjoy your hearty, comforting dish!
